The way humans have procured food has changed over millennia. From hunter-gathers to the invention of agriculture, factory farming, and the creation of food in scientific laboratories, our methods of food procurement and production directly influence and impact the way human societies function.
Through science we are developing new ways of creating our food - motivated by environmental concerns, ethical considerations, and the ever-expanding palate of human creativity, we are eating “clean meat,” spooning pistachio foam, and sipping Soylent. In a world where algae is the new super food, GMOs are available on supermarket shelves, and molecular gastronomy is sweeping the culinary arts, food is changing faster than ever before.
What will the future of food look like? How will science impact cooking? What will our social rituals around food involve in this new world?
